- 2 cups uncooked white rice
- 2 TB beef bouillon (optional, for cooking rice in water)
- 2 lb ground beef
- 1 medium onion, diced
- 2 red bell peppers, diced
- 2 tsp chili powder
- 2 tsp ground cumin
- 2 tsp smoked paprika
- 2 tsp oregano
- 1 tsp salt
- 1/2 tsp black pepper
- 5–6 garlic cloves, minced
- 2 Roma tomatoes, diced
- 1 (15 oz) can corn with juices
- Fresh cilantro or green onions, for topping
Instructions
- Cook rice in water (add bouillon if desired) according to package directions.
- While rice cooks, brown beef, onion, and bell peppers in a large deep skillet.
- Stir in chili powder, cumin, smoked paprika, oregano, salt, black pepper, and garlic. Cook 1–2 minutes until fragrant.
- Add tomatoes, corn, and cooked rice; stir and heat until everything is hot and combined.
- Serve topped with cilantro or green onions.
