Ingredients

  • 2 cups uncooked white rice
  • 2 TB beef bouillon (optional, for cooking rice in water)
  • 2 lb ground beef
  • 1 medium onion, diced
  • 2 red bell peppers, diced
  • 2 tsp chili powder
  • 2 tsp ground cumin
  • 2 tsp smoked paprika
  • 2 tsp oregano
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 56 garlic cloves, minced
  • 2 Roma tomatoes, diced
  • 1 (15 oz) can corn with juices
  • Fresh cilantro or green onions, for topping

Instructions

  1. Cook rice in water (add bouillon if desired) according to package directions.
  2. While rice cooks, brown beef, onion, and bell peppers in a large deep skillet.
  3. Stir in chili powder, cumin, smoked paprika, oregano, salt, black pepper, and garlic. Cook 1–2 minutes until fragrant.
  4. Add tomatoes, corn, and cooked rice; stir and heat until everything is hot and combined.
  5. Serve topped with cilantro or green onions.
