Ingredients

- 2 cups long grain rice
- 4 cups chicken broth
- 4 Tbsp oil
- 2 Roma tomatoes, blended
- 2 Tbsp tomato paste
- 2 Tbsp organic chicken bouillon paste
- ¼ cup very finely diced green bell pepper
- 2 tsp garlic powder
- 2 tsp onion powder
- 1–2 tsp salt
- 1 tsp paprika
- ½ tsp chili powder
- 1–2 tsp sugar
- 2 Tbsp vegan soy free butter
- Optional: small squeeze lemon juice
Instructions
- Rinse rice until water runs clear
- Heat oil in a large pan and toast rice 2–3 minutes
- Stir in tomato paste, spices, and bell pepper
- Add blended tomatoes, broth, and bouillon
- Bring to a boil, cover, and reduce heat
- Simmer 15–18 minutes until liquid is absorbed
- Remove from heat, stir in butter + tiny squeeze lemon
- Let sit 5 minutes, fluff and serve.
