Mexican Rice Packet-Style

Ingredients

  • 2 cups long grain rice
  • 4 cups chicken broth
  • 4 Tbsp oil
  • 2 Roma tomatoes, blended
  • 2 Tbsp tomato paste
  • 2 Tbsp organic chicken bouillon paste
  • ¼ cup very finely diced green bell pepper
  • 2 tsp garlic powder
  • 2 tsp onion powder
  • 12 tsp salt
  • 1 tsp paprika
  • ½ tsp chili powder
  • 12 tsp sugar
  • 2 Tbsp vegan soy free butter 
  • Optional: small squeeze lemon juice

Instructions

  1. Rinse rice until water runs clear
  2. Heat oil in a large pan and toast rice 2–3 minutes
  3. Stir in tomato paste, spices, and bell pepper
  4. Add blended tomatoes, broth, and bouillon
  5. Bring to a boil, cover, and reduce heat
  6. Simmer 15–18 minutes until liquid is absorbed
  7. Remove from heat, stir in butter + tiny squeeze lemon
  8. Let sit 5 minutes, fluff and serve.
