- 1 1/2 cups dried chickpeas
- 1/2 onion
- 3 garlic cloves
- 1/2 cup parsley or parsley + cilantro
- 1 1/2 tsp salt
- 1 tsp cumin
- 1 tsp coriander
- 1/2 tsp paprika
- 1/4 tsp black pepper
- 1/4 tsp baking soda
- 2–3 tbsp chickpea or oat flour
- Oil for frying
Instructions
- Boil chickpeas 5 min, then soak in the same hot water 1 hour. Drain.
- Pulse chickpeas, onion, garlic, and herbs until crumbly.
- Mix in spices, baking soda, and flour.
- Shape into balls/patties right away.
- Fry in hot oil (350-375F) 2–3 min per side until golden.
- Drain and serve warm.
