- 1 cup vegan cheese (nut-free, soy-free)
- 2 bell peppers, diced (any color)
- 2 Roma tomatoes, diced
- 1 cup unsweetened oat milk (or other creamy neutral plant milk)
- 1 Tbsp neutral oil (sunflower or canola)
- ¼ tsp paprika
- ¼ tsp cayenne pepper (adjust to taste)
- ¼ tsp garlic powder
- ¼ tsp salt
- ¼ tsp black pepper
Instructions
- Sauté peppers and tomatoes in oil until soft.
- Melt vegan cheese with oat milk over low heat.
- Stir in seasonings and sautéed veggies.
- Blend for extra smoothness (optional).
- Serve warm with chips, queso burritos, or veggies.
