  • 1 cup vegan cheese (nut-free, soy-free)
  • 2 bell peppers, diced (any color)
  • 2 Roma tomatoes, diced
  • 1 cup unsweetened oat milk (or other creamy neutral plant milk)
  • 1 Tbsp neutral oil (sunflower or canola)
  • ¼ tsp paprika
  • ¼ tsp cayenne pepper (adjust to taste)
  • ¼ tsp garlic powder
  • ¼ tsp salt
  • ¼ tsp black pepper

Instructions

  1. Sauté peppers and tomatoes in oil until soft.
  2. Melt vegan cheese with oat milk over low heat.
  3. Stir in seasonings and sautéed veggies.
  4. Blend for extra smoothness (optional).
  5. Serve warm with chips, queso burritos, or veggies.
