Brisket:

  • 46 lb beef brisket
  • 2 tbsp olive oil or avocado oil

Dry Rub:

  • 2 tbsp salt
  • 1 tbsp black pepper
  • 1 tbsp smoked paprika
  • 2 tsp garlic powder
  • 2 tsp onion powder
  • 1 tbsp coconut sugar (or regular sugar)
  • 1 tsp chili powder (optional)

Instructions

  1. Pat brisket dry and trim excess fat.
  2. Rub with oil, then coat evenly with seasoning.
  3. Preheat smoker to 225°F.
  4. Smoke brisket (fat side up) until it reaches 165°F (about 6–8 hours).
  5. Wrap in foil or butcher paper.
  6. Continue cooking until 200–205°F.
  7. Rest 1 hour before slicing.
