Salad Base:
- 4 cups gluten-free elbow macaroni
- 4 cups (2 Costco rotisserie OR 6–7 chicken thighs) cooked chicken, diced or shredded
- 1 cup cherry tomatoes
- 1 cup parsley (optional)
Dressing:
- 1 cup Follow Your Heart soy-free vegan mayo
- 2 tbsp apple cider vinegar or lemon juice
- 2 tsp Dijon-style mustard (allergen-free)
- 1 tsp garlic powder
- 1 tsp salt
- 1/2 tsp black pepper
- 2 tsp dill
- 1 tsp celery seed (optional)
- 1/4 cup sweet pickle relish (optional)
- 2 tsp maple syrup or honey (optional)
Instructions
- Cook pasta, rinse cold, let cool.
- Mix dressing in a big bowl.
- Add pasta, chicken, tomatoes (and parsley).
- Stir well.
- Chill at least 30 mins, then serve.
