Vegan Chocolate Covered Strawberries (Soy & Nut Free too!)

  1. 9oz Enjoy Life Semi-sweet Chocolate Chips
  2. 9oz Enjoy Life White Chocolate Chips
  3. 32 oz strawberries

Equipment:

  1. parchment paper
  2. 2428 sturdy toothpicks candy
  3. candy thermometer
  4. fork or butter knife, for designing

Instructions

  1. Wash & dry strawberries. Poke each one with a toothpick and let sit on parchment paper. For best results, use room temperature strawberries; too cold will cause extra condensation when dipping.
  2. In a wide mouth bowl, melt the enjoy life semi-sweet chocolate chips with 2 TB olive oil in a microwave for one minute.
  3. In another wide mouth bowl, Melt the enjoy life white chocolate chips with 1 TB olive oil in a microwave for one minute.
  4. Check temp. of both chocolates with a thermometer. Your chocolate should read 86-88 degrees.If too hot, mix in more cold chocolate chips or let sit, till it reaches desired temperature.
  5. Dip & Design, as desired!
