Vegan Chocolate Covered Strawberries

Ingredients & Substitutes
  • 9oz Enjoy Life Semi-sweet Chocolate Chips
  • 9oz Enjoy Life White Chocolate Chips
  • 32 oz strawberries
  • Equipment:
  • parchment paper
  • 24-28 sturdy toothpicks candy
  • candy thermometer
  • fork or butter knife, for designing
How to Make Chocolate Covered Strawberries

Wash & dry strawberries. Poke each one with a toothpick and let sit on parchment paper. For best results, use room temperature strawberries; too cold will cause extra condensation when dipping.

In a wide mouth bowl, melt the enjoy life semi-sweet chocolate chips with 2 TB olive oil in a microwave for one minute.

In another wide mouth bowl, Melt the enjoy life white chocolate chips with 1 TB olive oil in a microwave for one minute.

Check temp. of both chocolates with a thermometer. Your chocolate should read 86-88 degrees. If too hot, mix in more cold chocolate chips or let sit, till it reaches the perfect temperature.

Dip & Design, as desired!

  1. How long does it take for the chocolate covered strawberries to dry? It depends on which designs you do, but generally give them 15-20 mins to dry before moving them.
  2. How to store these vegan chocolate covered strawberries? These are best stored on the counter for up to 10 hours. Or, you can refrigerate them 1-2 days in an airtight container. Note, the fridge will cause some condensation on the chocolate covered strawberries.
  3. How long will these chocolate covered strawberries last? Strawberries themselves don’t last long and the addition of chocolate reduces their shelf life to 1-2 days in an airtight container in the fridge or up to ten hours on the counter.
