Vegan Strawberry Fluff (Pink Cloud or Jello Salad) *No Nuts or Soy!

This was my most favorite side dish at all of our family holiday meals. We call it Strawberry Fluff or Pink Cloud, but it is also known as Strawberry Jello Salad. My mom made it every year. Once I had to change my diet, I went on a mission to recreate this beloved side dish. After many years, I finally found a way to do it!! Hope you enjoy it! Serves 6-8 (1/2 cup servings).

Ingredients

  1. 2 (2.8oz packages) cooktop non-dairy vanilla pudding mix
  2. 2 (3oz packages) strawberry jello mix, OR 8 (0.7oz packages) plant-based strawberry jello [if vegan]
  3. 3 cups water
  4. 2 (9oz containers) vegan cool whip [if you can do corn and legumes], OR 1 batch of homemade
  5. 10oz mini marshmallows
  6. 2 (16 oz containers) sliced fresh strawberries

Instructions

  1. Whisk the vanilla pudding mix, strawberry jello mix, and water together in a medium saucepan over medium heat. Bring to a boil and then remove and pour into a large mixing bowl.
  2. Cover and place the mixture in the fridge to chill for 4 to 6 hours.
  3. Take out of fridge and genly stir in the remaining ingredients.
  4. Chill in fridge for an hour before serving.
