Broccoli Ham Casserole (Dairy, Gluten, Egg, Soy, & Nut Free)

My hubby originally made this recipe while we were dating. It was really good then & with a few dietary adjustments, its still yummy now too! Makes 10-12 servings. Takes about 1 hour to make.

Ingredients

  1. 12 oz gluten free rotini noodles
  2. 4 cups broccoli cooked
  3. 1 pound cubed ham

For the white sauce:

  1. 1 1/4 cup non dairy milk
  2. 2 TB gluten free flour (I like using the Walmart brand), or Namaste flour
  3. 2 TB smart balance butter, OR homemade
  4. 1 1/2 cups daiya mozza shreds cheese

For the topping:

  1. 1/3 cup gluten free panko
  2. 1/3 cup daiya mozza shreds (or mozza and cheddar shreds —i just don’t like the nondairy cheddar flavor)
  3. 2 TB melted smart balance butter

Instructions

  1. Preheat oven to 350
  2. Boil & drain pasta. Set aside for later.
  3. Mix all the white sauce ingredients into a pot and heat on medium high till cheese is melted.
  4. Season the white sauce with garlic, salt & pepper to taste.
  5. Mix the pasta, ham, & broccoli with the white sauce into a 9×13 baking dish.
  6. Sprinkle on the remaining topping: cheese & panko crumbs
  7. Bake at 350 for 25-30 mins or till top is golden brown
