Broccoli Ham Casserole (Dairy, Gluten, Egg, Soy, & Nut Free)

My hubby originally made this Broccoli Ham Casserole while we were dating. It was really good then & with a few dietary and allergy adjustments, it’s still super yummy now too! Makes 10-12 servings. Takes about 1 hour to make from start to finish.

Ingredients & Substitutes
  • Gluten free rotini noodles. You can use any gluten free pasta that you’d like. We just use rotini because it’s what our nearest grocery store carries. But that being said, elbow pasta would be amazing in this recipe!
  • Broccoli, cooked. I recommend using fresh broccoli for quality of texture in this dish. We chop up the broccoli into small bite sizes.
  • cubed ham. We love cubed ham in this casserole. Bacon could be another yummy addition!
  • non dairy milk. Pick any non dairy milk you’d like for this. It really doesn’t matter which kind you pick as long as it is not flavored. This will be the main ingredient for your sauce.
  • All-purpose gluten free flour. I like using the Walmart brand), or Namaste flour. Bobs red mill is another great option.
  • smart balance butter, OR homemade. Again, any vegan butter that you can safely eat will work just fine here. We usually use our homemade butter recipe because we prefer the taste and the cost is way less expensive.
  • Daiya mozza shreds cheese. Daiya or violife cheeses taste lovely in this recipe. But we also love to make our own cheese! You can check out our homemade cheese recipe here.
  • gluten free panko. This is for the topping. Sometimes we don’t put this topping on because it has a tendency to become soft when you eat it as leftovers. A simple solution to this is to reheat leftovers in an oven, not a microwave.
How to Make Broccoli Ham Casserole

Preheat oven to 350F

Boil & drain pasta. Boil till noodles are still firm, but pliable (al dente), not fully cooked. Set aside for later.

Mix all the white sauce ingredients into a pot and heat on medium high till cheese is melted.

Season the white sauce with garlic, salt & pepper to taste.

Mix the pasta, ham, & broccoli with the white sauce into a 9×13 baking dish.

Sprinkle on the remaining topping: cheese & panko crumbs

Bake at 350 for 25-30 mins or till top is golden brown

Common Questions
  1. Can I use frozen and fresh broccoli in this recipe? Either option works just fine! Although, using frozen broccoli will mean more water content added to your dish, so I recommend adding 2-4 TB more flour to minimize watery-ness.
  2. Why should I not fully cook the noodles? If you fully cook the noodles you will end up eating a mushy casserole. Fully cooked noodles tend to break and fall apart more easily in casseroles. Cooking them till they are firm but pliable helps them stand up to all the other ingredients without turning into mush.
  3. Can this meal be frozen for later? Everything except the noodles can be frozen up to 4 months. When ready to eat it, thaw until room temperature, stir in some al dente noodles & bake as directed.

  1. 12 oz gluten free rotini noodles
  2. 4 cups broccoli cooked
  3. 1 pound cubed ham

For the white sauce:

  1. 1 1/4 cup non dairy milk
  2. 2 TB gluten free flour (I like using the Walmart brand), or Namaste flour
  3. 2 TB smart balance butter, OR homemade
  4. 1 1/2 cups daiya mozza shreds cheese

For the topping:

  1. 1/3 cup gluten free panko
  2. 1/3 cup daiya mozza shreds (or mozza and cheddar shreds —i just don’t like the nondairy cheddar flavor)
  3. 2 TB melted smart balance butter

Instructions
