A creamy, fluffy coconut rice made with two cans of coconut milk. Perfect as a side for Hawaiian chicken, curries, or enjoyed on its own. Simple, flavorful, and easy to make!

Ingredients

  • 2 cups jasmine or long-grain rice
  • 2 cans (13.5 oz each) coconut milk
  • 1 cup water
  • 1 teaspoon salt
  • 1 tablespoon sugar (optional, for slightly sweet rice)
  • 1 teaspoon coconut oil or vegetable oil (optional, for extra richness)

Instructions

  1. Mix all ingredients into a pot and heat covered on medium high until it boils.
  2. Once it reaches a boil, turn the heat on low and simmer for about 10 mins or until rice softens and coconut milk thickens.
