- 2 cups jasmine or long-grain rice
- 2 cans (13.5 oz each) coconut milk
- 1 cup water
- 1 teaspoon salt
- 1 tablespoon sugar (optional, for slightly sweet rice)
- 1 teaspoon coconut oil or vegetable oil (optional, for extra richness)
Instructions
- Mix all ingredients into a pot and heat covered on medium high until it boils.
- Once it reaches a boil, turn the heat on low and simmer for about 10 mins or until rice softens and coconut milk thickens.
