Apple Biscuit-Style Cobbler

This Vegan Cobbler is hearty, filling, and best of all allergy friendly! It is free from dairy, eggs, gluten, soy, and nuts. The biscuit topping perfectly accents the apple filling, reminding me of those delicious Apple Hand Pies from McDonald’s!

Ingredients and Substitutes

For the apple filling:

  1. 2.5 pounds apples, cored & quartered
  2. 1/3 cup brown sugar  
  3. 1 TB lemon juice
  4. 1 TB cornstarch
  5. 1/2 tsp vanilla
  6. 1 tsp cinnamon 
  7. 1/2 tsp nutmeg
  8. 1/8 tsp salt 

For the biscuit topping:

  1. 2 cups (gf) all purpose flour with xantham gum (I use Namaste from Costco or this one; if you use a different gf flour; you will not get the same results)
  2. 1 tsp cinnamon
  3. 1TB baking powder
  4. 1/2 tsp baking soda
  5. 1/2 tsp salt
  6. 1/4 cup sugar
  7. 3/4 cup coconut milk
  8. 1/2 cup cold chunks of vegan soy free butter, OR homemade (homemade recipe is top 9 free, seed free, and can be made legume free) *See notes
  9. 3 TB apple cider vinegar
  10. 1 TB cornstarch, OR arrowroot powder
How to make Apple Biscuit-Style Cobbler
  1. Pour all ingredients for apple filling into a crockpot and mix thoroughly. 
  2. Then, in a separate mixing bowl or kitchen aid, mix all the ingredients for the biscuit topping together, till a sticky and smooth dough forms.
  3. Scoop the dough over the top of the apple filling and press down to cover all the apples with dough.
  4. Next, turn the crockpot on high for 4-5 hours, till the biscuit dough has turn golden brown on top and some apple filling has spilled over onto the dough.

Additional Flavors & Add-ins

With the arrival of fall, everyone is all about the pumpkins. But, honestly, I’m over here like HEY APPLES! This was the first time I’ve ever made a cobbler with apples. It did not disappoint!
Additionally, you can have fun adding in different fillings if desired. Any can of pie filling or 2 cups of berries to substitute the apples will be yummy!
