Peach Cobbler

- 3 cups (12 oz) fresh blackberries
- Triple berry: 1 cup blackberries, 1 cup blueberries, 1 cup raspberries
- Blackberry + stone fruit: 1 1/2 cups blackberries + 2 cups sliced peaches or nectarines
- 1 cup (200 g) granulated sugar, divided
- Cinnamon-spiked: add 1/2 tsp cinnamon
- 1 cup (120 g) all-purpose gluten free flour with xanthan gum (we like namaste)
- 2 tsp baking powder
- 1/2 tsp fine salt
- 1 cup oat milk
- 1 tsp vanilla extract
- 1/2 cup (4 oz / 113 g) plant-based butter
- Vegan top 9 free vanilla ice cream or whipped cream, for serving
Instructions
- Preheat oven to 350°F.
- Mix berries with 1/4 cup sugar. Rest 30 min.
- Whisk flour, baking powder, salt, and remaining sugar.
- Add milk + vanilla; whisk smooth.
- Melt butter in baking dish (4–5 min).
- Pour batter over butter (do not stir).
- Spoon berries on top. Add juices.
- Bake 45–50 min, until golden.
- Cool 15 min. Serve.
