Ingredients

  • 3 cups (12 oz) fresh blackberries
    • Triple berry: 1 cup blackberries, 1 cup blueberries, 1 cup raspberries
    • Blackberry + stone fruit: 1 1/2 cups blackberries + 2 cups sliced peaches or nectarines
  • 1 cup (200 g) granulated sugar, divided
    • Cinnamon-spiked: add 1/2 tsp cinnamon
  • 1 cup (120 g) all-purpose gluten free flour with xanthan gum (we like namaste)
  • 2 tsp baking powder
  • 1/2 tsp fine salt
  • 1 cup oat milk
  • 1 tsp vanilla extract
  • 1/2 cup (4 oz / 113 g) plant-based butter
  • Vegan top 9 free vanilla ice cream or whipped cream, for serving

Instructions

  1. Preheat oven to 350°F.
  2. Mix berries with 1/4 cup sugar. Rest 30 min.
  3. Whisk flour, baking powder, salt, and remaining sugar.
  4. Add milk + vanilla; whisk smooth.
  5. Melt butter in baking dish (4–5 min).
  6. Pour batter over butter (do not stir).
  7. Spoon berries on top. Add juices.
  8. Bake 45–50 min, until golden.
  9. Cool 15 min. Serve.
